Ingredients

• 1 cup rolled oats
• 1 cup nut butter (your choice)
• ⅔ cup honey
• 2 tsp vanilla extract
• ½ cup dark chocolate chips (optional)
• 1 scoop of your favorite protein powder
• ¼ cup unsweetened coconut flakes

Instructions

1.     In a large mixing bowl, combine the oats, nut butter, honey, protein powder, vanilla extract, and chocolate chips (if using).
2.     Mix all the ingredients together until they are evenly combined.
3.     Using a spoon or cookie scoop, portion out the mixture into round balls and place them onto a baking sheet lined with parchment paper.
4. Roll each ball with your hands until they are smooth and evenly shaped.    
5. Once all the mixture has been used up, sprinkle the coconut flakes over the top of the balls and press lightly so that they stick.
6. Chill the protein balls in the refrigerator for 1-2 hours until they are firm.
7. Store the protein balls in an airtight container in the refrigerator for up to one week.
