Anytime Chicken Salad

Making a big batch of chicken salad is a great meal prep option for a healthy and convenient lunch that’s easy to pack for on-the-go.

Another lightened up classic!

For someone counting macros or who wants to be cautious of how they use their fat calories, mayo-based salads can be difficult to enjoy.

In addition to my Easy Tuna Salad, this Anytime Chicken Salad is something I like to whip up for a fast protein packed lunch and is easy to pack for days when you are on-the-go, headed to a picnic, BBQ or a day on the lake.

I’ve lightened this classic up by using a combination of avocado mayo, Greek or Icelandic yogurt, and Dijon mustard.

While most of the ingredients are pretty standard for a chicken salad, I discovered how unique adding Herbs de Provence was instead of dried thyme by accident and never turned back. The Herbs de Provence defiantly makes this simple salad a little fancier.

Feel free to substitute dried cranberries instead of raisins. I like to use Patience Fruit & Co. cranberries because they are sweetened with apple juice instead of sugar. And don’t worry about the macros difference … it’s negligible.

Lunch & so much more …

While this is perfect for a lunch on-the-go, I wouldn’t hesitate to serve this as an appetizer with thinly sliced apples, cucumbers or flat bread crackers!

Ingredients

• 500g cooked chicken breasts
• 120g apple chopped
• 150g celery chopped
• 75g red onion finely chopped
• 40g seedless raisins
• 30g Primal Kitchen Avocado Oil Mayo
• 170g Siggis Plain Yogurt (0% fat)
• 30g organic Dijon mustard (I like Annie’s Naturals or Thrive Market brands)
• 2 tsp Herbs de Provence
•1 tsp ground black pepper

Instructions

1.     Add all ingredients to a large bowl.
2.     Mix to combine. I like to use my hands to fully incorporate all ingredients. If this isn’t for you, you can use a stand mixer with the paddle attachment to mix everything together.

Serving Suggestions

This chicken salad is perfect for a summer picnic, backyard BBQ or day on the lake. You can serve this on top of bed of salad greens, stuff it in a pita or a wrap or eat with flatbread crackers, thinly sliced cucumber or apples.

Note: If using rotisserie chicken instead of cooked chicken breasts the macros change to 22g F|20g C|28g P|2g Fiber
